The holidays are upon us, and what better way to celebrate than with a delicious, moist Christmas cake? This recipe offers a delightful alternative to traditional alcohol-laden cakes, perfect for sharing with everyone. It's rich, decadent, and guaranteed to be a festive centerpiece on your holiday table.

Ingredients:

  • For the Cake:

    • 225g unsalted butter, softened
    • 225g caster sugar
    • 4 large eggs
    • 225g self-raising flour
    • 50g ground almonds
    • 1 tsp baking powder
    • 1 tsp mixed spice
    • ½ tsp ground cinnamon
    • Zest of 1 orange
    • 100g dried cranberries
    • 100g sultanas
    • 50g currants
    • 2 tbsp milk
  • For the Buttercream Frosting:

    • 250g unsalted butter, softened
    • 500g icing sugar
    • 2-3 tbsp milk
    • ½ tsp vanilla extract
    • Food coloring (optional)

Instructions:

Making the Cake:

  1. Preheat & Prepare: Preheat your oven to 150°C (300°F/Gas Mark 2). Grease and flour a 20cm (8-inch) round cake tin.
  2. Cream Butter & Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy. This is best done with an electric mixer.
  3. Add Eggs: Beat in the eggs one at a time, mixing well after each addition.
  4. Dry Ingredients: In a separate bowl, sift together the flour, ground almonds, baking powder, mixed spice, and cinnamon.
  5. Combine: Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Be careful not to overmix.
  6. Fruit & Zest: Stir in the orange zest, cranberries, sultanas, and currants. Add the milk and mix until evenly distributed.
  7. Bake: Pour the batter into the prepared cake tin and bake for 1 hour and 30 minutes to 2 hours, or until a skewer inserted into the center comes out clean.
  8. Cool: Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Making the Buttercream Frosting:

  1. Beat Butter: Beat the softened butter in a large bowl until light and fluffy.
  2. Add Sugar: Gradually add the icing sugar, beating until smooth and creamy.
  3. Milk & Vanilla: Add the milk and vanilla extract, beating until the frosting is light and fluffy. Add more milk if needed to reach your desired consistency.
  4. Color (Optional): Add food coloring at this stage, if desired, to achieve your preferred color.

Assembling the Cake:

Once the cake is completely cool, frost it generously with the buttercream frosting. You can decorate it further with sprinkles, marzipan, or other festive decorations.

Tips and Variations:

  • For a richer flavor: You can add a teaspoon of almond extract to the cake batter.
  • Different Fruits: Feel free to substitute your favorite dried fruits. Chopped candied peel is a lovely addition.
  • Make it ahead: This cake can be made a few days in advance and stored in an airtight container at room temperature.
