Ingredients:

For the Cake:

  • 175g unsalted butter, softened

Instructions:

Preparing the Cake:

  1. Preheat & Prepare: Preheat your oven to 150°C (130°C fan/Gas Mark 2). Grease and line a 20cm round cake tin.
  2. Cream Butter & Sugar: Cream together the softened butter and brown sugar until light and fluffy. This is best achieved using an electric mixer.
  3. Add Eggs: Gradually beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.
  4. Dry Ingredients: In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, and cloves.

  8. Bake: Pour the batter into the prepared tin and bake for approximately 2-2.5 hours, or until a skewer inserted into the center comes out clean.
  9. Cool: Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Making the Rum Syrup:

  1. Combine Ingredients: In a small saucepan, combine the rum, water, and sugar.
  2. Simmer: Heat gently, stirring until the sugar has dissolved and the syrup is smooth.
  3. Cool: Allow the syrup to cool completely.

  1. Syrup the Cake: Once the cake is completely cool, generously brush the rum syrup over the top and sides of the cake. This keeps it moist and enhances the flavor.
